Guilt free quickies

This is a guilt free quickie and a family favorite covering my 3 bases; protein, starch & veggie.

  • Ikea meatballs (I like the meat but there are chicken and veggie ones also)
  • Green beans
  • Corn on the cob

I pop the meatballs into the oven for 15 mins @ 435 °F. I set a big pot of water to boil and while I’m waiting on that I’m prepping the corn and the green beans for cooking. By the time I’m done the water is usually boiling so I thrown both the beans and the corn in together for 5 mins. I use those same 5 mins to prep the Ikea GRÄDDSÅS cream sauce and within 15-20 mins, dinner is ready to be served🙂

I make sure to cook enough for lunches from the leftovers. AC can reheat his meals at school so that helps. I cut the corn into wheels and he gobbles everything up just like at dinner time. The meatballs also work well at room temperature.

AC’s Octonauts themed 4th birthday party!

I won’t lie… when AC told me he wanted to have an Octonauts themed birthday this year, I got super excited. Have you seen how cute they are?? Last year he chose a Thomas themed birthday and while I understand the appeal for kids, I wasn’t that much of a fan.

Anyway, I was extremely pleased with the results (and got AC’s seal of approval) and the best part is, something wonderful happened along the way. I’ll share that in the coming weeks. All I can say is, it’s very exciting🙂

The party:
A 4Cats paint splatter party (if you’re not familiar with this place, you should be – I can’t imagine anyone NOT loving everything about it)

The favors: 
I packed some Octogoodies for the kids (a coloring page and activity sheet) along with a mini canvas, paint brush and 3 paint colors to keep with the art party theme

The dessert:
Martha’s pastel layer cake in different shades of blues & AMAZING chocolate chip cookie dough cupcakes from Annie’s eats – cake and cupcake toppers made by yours truly🙂

Halloween fun! :)

Saw these on the decorated cookie and had to try them – super easy to make and super cute too! Best part was that my 3.5 year old was able to make them without any assistance.
